Got a leg of pork yesterday @ the supermarket for £4
Having been a butcher for many years ,I re-rolled it [after trimming it properly :roll: ] then made cross grain cuts into it to allow the maple syrup to be rubbed in deeper,replaced the skin after criss crossing it and tied it up all pretty like.then wrapped it up in cling film to allow the syrup to marinade the meat better in the fridge for 18hrs
In the oven @9:00 pm tonight for 1 hour at 250 degrees c
Tub of goose fat smothered over maris piper potatoes that have been partly boiled added to the roasting tin with 30 mins to go,heat reduced to 200c
Gravy made from the remains of the above,mixed with a little stock[cube] and thickened with flour.
