Buy Jcloths nice Salsa for the Paul Components SS wheels...lovely hubs.
Are you going for SS specific wheelset with screw-on freewheel?
Don't think I would do that again myself...I would have CK or Hope SS hubs with the shorter cassette type fitting.....gives you more flexibility with chain line adjustment etc.
Anyway...looking forward to seeing this build
