To cut a long story short, what sort of stem would I need to mount on top of a 1 1/8" MTB suspension fork?

Either way 1 1/8" Ahead BMX Stem will fit, normally MTB stems are not as bulky and tend to be longer, you can also get BMX stems that are stubby too which may be better for your Ski-bike needs?

Yes, I have been running an adjustable stem and MTB handlebars with moderate rise for my skibikes. This suits riding seated, but I would now like to try a BMX stubby stem and BMX bars for a higher handlebar position that will suit a motocross riding stance.
