‘99 GT Zaskar period parts help

Hi all, it’s been a long time since visiting these pages so please be kind

I built a GT Zaskar circa ‘99 for my wife, XTR throughout, V-Brakes, Chris King, Ringle, Mavic SUP rims with Azonic bars and Shorty stem. Shamelessly over time I stripped various parts, mainly the XTR replacing with XT and Hayes Disc brakes. The wheels also got swapped for modern lightweight Mavic Cross Ride with semi slick tyres
I would like to get the bike back to a more period correct look starting with the wheels and tyres. What Disc compatible wheel package would be from that period ? Pictures attached

but don't worry too much about butchering it, its from the era when nobody cared any more. (at this point unless its an LE or Team, then the love aint there)
