Not sure what you folk regard as 'Classic', but I have one of these and want to spruce it up - are there good suppliers of spares for older bikes?

Also, don't know how heretical this is, but would rather like to put straighter bars on it for a more relaxed ride - any suggestions?

I'm a heretic and put straight bars on my Galaxy and Bob Jackson tourer. And STIs and everything else. I know it grates with some people but if you're gonna use it why not? if you like drops you can always get a quill stem with a rise on it and bolt on front plate so you don't have to untape the bars. bike shop can spread the rear dropouts if they're 126mm to stick a modern back wheel for more gears and no bent axles.This could involve longer BB axle to improve chainline If you wanna go the old and un-indexed route I've got various decent quality vintage bits (eg Suntour VX rear mech) that you could have for the price of the postage if you wanted them, as I doubt I'll ever get round to using them.
