yeah 10 speed ergos with shimano 8 sp back end works faultlessly. My winter bike is set up so.
My best bike runs 10 speed ergos with a shimano 9 sp back end, similar to the above, but the cable clamps slightly differently - google "hubbub mod".
I also ran 8 speed ergos (rare now) on a 6 speed shimano back end. 6 speed is a bit limiting for performance cycling, but ok for touring or commuting and the wide spacing (physically wide, not wide ratios) between sprockets means its very tolerant to not being cleaned from accumulated crap, and therefore good for a commuter.
