Campagnolo Vs Shimano?

Could someone please tell me what the difference is between Campag and Shimano? Could I use a shimano chainset/groupset with Campag wheels, I have heard not, but why?

You absolutely can do this. Use a Mavic M10 cassette and a Mavic chain.

Also Shimano 8 speed cassette with old style Campag 10 speed ergos. Works perfectly so I'm told.

Or as we say over here,

Campag wears in, Shimano wears out.

I'm a campag man incase you ain't worked it out.
 
Shops offer wheel builds only around Shimano hubs 99% of the time so your kind of stuck with factory wheels if you want to use Campag groups.

Personally I like the Ergo shifters over STI's - nicer design (thumb paddle), and hell of a lot cheaper to repair or replace. I rode a bike with 105 10speed STI units and hated it, not the shifting, just the bulky hoods and dicky gear changing all rolled into the brake lever is not appealing. Campags more finesse looks are a selling point too, all to his own I suppose on that one. If you like the industrial kitchenware look then go Shimano.
