Retro (galaxy) or new (Kona Sutra)...any advice?

If you're 5'7", you're on the cusp of wanting a bike with 26" wheels.
How about a nice Thorn? If you want new, that's probably the way to go. Failing that, the retro MTB with touring bits is the way to go. I have a Muddy Fox in the for sale section that would do you proud, but there are others.
 
I'd also recommend a Hewitt Cheviot - similar price to the Galaxy, but Paul Hewitt has rave reviews, especially if you get his bike fitting service (for free when you buy a bike).
The Cheviot is just a bit more sorted than the Galaxy.

I'd also back up LGF's remarks about converting an old early 90's steel MTB. Especially if you are of a compact bulid (I'm the same height as you) then 26" wheels are a good way to go.
I did a drop bar conversion of a 1990 Marin Palisades. It's been like this for 15 years now, done thousands of miles on 4 continents and is rock steady at 45mph with 4 panniers and a barbag.
