I have a NOS Mavic 316 (1.1/8”) for sale too.
I would recommend rigid forks though - I can’t recommend Pace enough - any Pace RC30 or for more modern RC31. All round Tyres I always suggest Smoke and Darts - especially the reissue. A good combo with the pace as you’ve comfort and lightweight with minimal maintenance.
XT M73x would be a good choice - or XTR M900 regarding derailleurs brakes and cranks

I've just been talking to the guy selling that set of Mag 21 forks on Ebay that I linked to and he said his forks are threadless ones... which takes out a lot of the headsets I've found so far unfortunately.

I suppose ultimately it boils down to aesthetics and personal preference. Some people prefer suspension- me personally, I prefer rigid unless I’m going to be hitting some tougher off road trails and need suspension. I suppose for gravel and muddy tracks rigid Would be fine. But again it depends on what you like and want.

Benefits are less maintenance - better reliability and also weight saving. A better ride in many ways especially on road and have other advantages

The Mavic 316 is threaded. (I had two different ones on the MT4) I had Mag 21 I believe initially on the MT4 and wasn’t keen on them. I’d prefer some Pace RC35 or even better some newer Pace RC36 suspensión forks - sorry I forgot to mention these.
 
so its looking like my existing Rock Shox Indy Sl (long travel) forks are treadless (I think) as if I understand correctly all of those forks were??

that would mean in order to use my existing stem then I should be looking for threadless forks as replacements, such as the ones I've found on Ebay and the RC36 ones you have also suggested.

the problem I'm now having is finding a threadless headset, all the Shimano XT and XTR and Mavic 316 ones I have found are threaded ones and I can't seem to find anything similar that's threadless. Did they only make threaded headsets back in the day, or am I missing something?
 
You’ll be able to see quite a selection of Pace RC36 on eBay and I think they’re all threadless! So can use a threadless headset and Ahead Stem.
And as for headsets - you’re spoilt for choice - a nice Chris king threadless Would be nice! Or a Hope headset.
Can look at period correct or newer - depends what you want and the look you’re after - but the Rond headsets are lovely - just keep that and add some forks.

Nice get would be - if you want suspension forks - either the Rond or a Hope Headset with Pace RC36 forks. There are some nice 1.1/8” stems of all varieties -
 
My Torus XT Titanium rebuild, aiming for a clos-ish match to the catalogue pic. Had lots of fun with this one; light as a feather and rides like a dream.
