If you consider that Shimano are global, selling the same stuff into all global markets, they need to find names that do not mean anything negative or offensive in any language. It wouldn't be any good to launch a new groupset only to find that the name they chose meant 'horse shit' or 'anal prolapse' in say, Portugese.

Big global companies spend huge sums of money with branding specialists to come up with unique names that are neutral. Beige, if you will.

Now this one iirc was because they didn't see a need to name the road group sets under the low end and the number come from a long time earlier.
That is until recently and the lower sets are now getting names because people now like them apparently.

Something like that, recent group set name launch on a road bike stuff blurb.

But they recently reintroduced 2300 under Sora.

If as mentioned Deore means Dear and hence the dears head at the time. That sounds plausible. It was a trekking group set and Dear seems a reasonable thing to symbolise that. Also the head looks like the front end setup at the time.
XT is easy, remember it was Deore XT
It means extra. That little bit extra from Deore to enable strong and higher performance. So came the Trekking/MTB hrouppset we know and love.
Is was quite a lot of year till others came along when popularity grew in the late 80s and ... Mountain LX number to just split it up for diversity so manufacturers to price/cash in on it.
LX was kept from there. LX could mean anything.. Luxury? Less expensive, Leasure Cross?
I don't know this one yet.
DX deluxe is what it often means Deore Extra? Since LX sat in the Deore group at that rebrand.

All the new ones will be high market research into names to appeal to people. Times are different now.

not bicycle related but Nissan sells a small SUV in Australia called the Dualis , in Uk that car is called Quashqai ,and the new model coming is going to be Quashqai here too (such common sense !)
