They are absolute bike porn but... Titanium galls so wouldn't it get through a chain in about 10 minutes flat?!

Ok smart Alec, where's your Ti cassette ;) .

titanium cassettes such as action tec have been available for many years. shimano sell tons of xtr & dura ace cassettes that use titanium cogs without issue.
to answer your previous question, titanium galling is more an issue with threaded parts
