Bar ends, 46'ers, elastomer suspension, rapid rise, biopace, hydraulic rim brakes, disc wheels, mag wheels, bottom brackets on the swing arm, single pivot, square taper, octalink, Muddy Fox, bottom pull...
maguras are still oem on some bikes, trials & time trial (aero version) so hyd rim brakes can't be in the fad list.
Nor can octalink be on the list, splined hollow spindle BB's are not likely to go away.

Splatter paint and purple anodising

1/4" Headsets but I'm not sure how much of a fad these where as very few bikes had them

BMX

Surely its a fad if it was here one minute and gone the next.

SPD Sandals, chainstay mounted tensioners, gel saddles, 24" mtb wheels etc are all still being made and sold so are not a fad.

Square taper is not obsolete just because the big boys dont make it anymore, thats just bigging up Shimano's ego, they are not god.

V brake booster arch thingies....

Brake boosters were no fad, they were tuning parts for the true connaisseurs.
The only reason they disappeared over time is because advancements in frame design meant that brake bosses stopped flexing so much.

My Scott wears a set of Tektro T9 boosters, and the improvement in both brute braking force and modulation is tremendous.
