I didn't build it, but I believe the bars separate in the middle, where they are secured by the stem clamp.

Between the frameset and the so rare parts on it, I don't know where looking :D

I remember the lecréme crankset (but only made for road). Very beautifull like the other titanium crankset. But like the Cook's or the morati, they are not very stiff and so brittle… But on other hand, the epic frame was quite stiff.

I didn't know that specialized made other size for the Epic Ultimate. I only have seen 19" frame

PS : the saddle name is "Pluma" ;)
