If you can adequately shim the Pace V-brake adapters to spread the load then it should be possible.
I take it On-One don't do v-brake adapters for these forks?
Thought about selling the On-One forks and picking up some Rc31's with the V-brake mounts?

How can you shim something that's a smaller diameter than what you need?
Either you under tighten the mount and hope that the tighter curves and unmet ends don't damage the legs or you put a band around the ouside of the mounts whilst still checking for tight curves and pressure from edges.
