I was under the impression they were 120mm travel. However when I looked at the air pressure chart on the back of the non-drive leg it gives a pressure for 80mm and a pressure for 100-120mm

Are they adjustable for travel (and if so, how)? Or is it just a generic label? They're not u-turn, or anything fancy, and believed to be 2011 model year

There's a black disc/spacer thing in the forks you take out to adjust travel I think. That my friend, is as far as my knowledge goes.
 
OE ones are usually set at a level of travel and can't be adjusted. However, aftermarket there is spacer that can be removed to give more travel, as said above. Lots of step by step guides on the web to do this, not difficult to do :)
 
I also have these forks, i purchased them pre-set to 100mm.

Travel is adjusted via filing (increase travel) or adding (decrease travel) an internal spacer. Not recommended.

For your information, the RockShox air pressure chart on recent model forks does not conform exactly to performing with total accuracy, the pressure stated is often miscalculated.
