stem looks far better pointing down as in the first picture

That is very nice, lucky find!

I prefer the stem 'upright'. Bitd I would have said lower, but it just looks more natural in the higher position & I bet it feels better on your vertibrae like it is...

I think that "what do you think" doesn´t matter. Install the stem in that position that enables you to ride this bike in a comfortable way.

...oh and get some cages for the XT pedals. They´re not meant to be ridden with shoes on both sides. One little detail that makes a truly p.c. bike.
