I love it...hosted my first cheese and wine pairing evening last night, tasted these

Young fresh goats
Saint Maure de Touraine
Comte St Antoine
Hereford Hop
Epoisses de Bourgogne
Mont D'Or
Camembert de Normandie
Roquefort

with some nice wines to match

Fancy studying cheese quite intensly

What is your favourite?
 
Sounds like fun, i like a good Jarlsburg or a Gruyere :D with a white pinot grigio/columbard, as for red wine i only like a pure ganache from la mancha with any food but fish.
 
Roquefort is my fav .

hometown is only a few km from the caves . as locals we always get the best cheeses .

I like red wine with it , but at catering school we were told sauternes and white Port were a good math too .

Mmmmmmhhhhhhhhhhh.

My grandfather was brought up in Switzerland, and he organised the cheese and wine for our hotels.

I remember my favourite being one of the hard goat's cheese.

Wish I could remember the exact one, have found similar but not the actual one over the years.

Wine is great, but a good cheddar and apple cider cannot be beaten.
 
Favourite cheeses:

Black Bomber - lovely, super strong cheddar with nutty finish.
Coverdale - sort-of like a "strong" Wensleydale. Quite difficult to find, but worth it.
Cotherstone. Mild, but yummy. Difficult to find if you are more than about 2 miles outside of the village.
Camberzola blue brie.
A good blue stilton.

american cheese is horrible processed and plastic..i want eeeeengleeeeessshhh chheeeessssee
