Thought I may as well update this, although the build now would involve post 97 parts (99 XT drivetrain) the frame, forks, bars, stem, headset and V arms are all most definately pre 97 so I may as well keep it in here where I've started.
I had a look at the gear hanger and it does indeed have everest stamped on it so thankyou very much for putting a name to her. May get some graphics made up now!
Anyway, here's a pic of how things are going despite a few problems along the way. Should be finished by next weekend at the latest so I'll post a full spec list then with pics.
