fitting 7 speed cassettes to 8/9 hubs

do you just shim the 7 speed cassette at the back so it sits out the same distance as a 8/9 speed cassette.

On the end of the freehub, between the largest sprocket and hub body.
 
I've just got a (not old school) new set of downhill wheels and had to fit a spacer - works fine. Word of warning! Make sure your rear mech is adjusted perfectly, because you increase the chance of your chain falling onto the spokes by overshifting.
