i would go XT plus some X-Lite or similar bling.

XTR Here too.. Most is easy to source, STI's are the hard part, along with casette and chain, But you can buy new ones of these 
M730 cranks were still in the lineup in 1993, which is RC200 times.
I am currently going through the same dilemma for my 93 Lotus build. M900 is what I would like but good stuff goes for so much these days. Even M730 seems to be going up in price.
On your Pace though, I like the M730/5 sort of idea, then obeying the laws of pace, adding a M'burn crankset.

What about XTR shifts/mechs etc with British bling?? Best if both worlds...
