Threw this together today, bit of a mix match of parts.
Spec is;
Frame: 1992 Cannondale M500 (If any one knows differant please say, oh, there is no frame number!)

Fork: Cannondale Pepperoni

Handlebar: No Name Alloy
Grips: Random oval grips from the bottom of the parts bin!
Barends: Onza (steel)

Brakes: Coda
Brake Pads: Aztec
Brake Cables: Shimano
Cantilever cable hangers: Coda Force 40
Brake Levers: Shimano STX RC

Shifters: NA
Front Derailleur: NA
Rear Derailleur: Alivio
Derailleur Cables: NA
Cassette: Shimano 17 tooth sprocket
Chain: Shimano
Cranks: '95 LX RH, random LH
Crank Bolts: Yes
Chainrings: Standard Shimano 34? tooth middle ring.
Chainring bolts: 5 of them...
Bottom Bracket: UN52
Pedals: Tioga surefoot RH, odd crap LH

Hub Skewers: Shimano
Rims: Sun
Hubs: Shimano Exage
Nipples: Hmmmm
Spokes: Stainless
Tyres: Continental 2.3 Kevlar Bead
Tubes: Raleigh Ha Ha

Saddle: Velo

As you can tell, a real mixture of random stuff, but hey, it works.
I hacked down an old rear mech with an angle grinder for a chain tensioner, it works, but i haven't tried it off-road yet. Stripped two old cassettes for the spacers, to space the single sprocket on the freewheel. Think you could say this is single-speeding on a budget.

My '92 M700 came with a Pepperoni anyways - not sure about the M500 though.
