Why so cheap?

I think the M800 hub is the older model Saint hub (read less fashionable and thus cheaper).
Probably more robust than newer versions although a bit heavier.
If you don't mind the centre lock disc arrangement then I say go for it, looks to be a quality hub imo.

I reckon that the Saint will be of a higher quality than the XT,the only trade off being, what I see, is an (acceptable) increase in weight.Ive never used through axles,will the 10mm through axle be a straight fit into my xc hardtail?Are all Shimano centrelock discs compatible-will SLX/Deore etc fit this Saint hub?

I think some XT years are better than others. Yes likely that the Saint is better quality than the XT. Reading the reviews of the XT hubs seems lots of freehubs are cracking. I'm would imagine all centre lock hubs run the same system.
 
Ah, you see this is why I ride retro!

I think you'll be fine with the 10mm QR axle.

The discs I don't know. They seem hard to find after a quick Google, and they can only get rarer. The spline diameter is too big to allow a 6-bolt adapter to fit, so that's not an option.
