do 10 speed cassettes fit 9spd freehubs?

As title, know nothing about this modern malarky but fancy trying 1x10 on my modern hardtail.

Is it just a case of new shifter, rear mech and cassette and ditch the rest?

and yes, rear mech for 10 speed has different pull so 9 speed won't work, kinda annoying. you may want to consider using 10 speed chain too.
 
I think you can get away with using a 9 speed chainring. I'm just running a Hope 34 tooth jobbie which I don't remember being 10 specific, I'm sure the packaging just said 9 and 10 speed compatible.

I'm sure you need to run a 10 speed chain though as they are slightly narrower to accommodate the extra cog.
 
You'll be fine with a 9 speed chainring. 10 speed chains are slightly narrower than 9 speed ones, but it's the outer plates that are thinner. The space between the inner plates remains the same. You don't even need to buy the Shimano 10 speed chain - I run one bike with bits from the bargain bin using a Mavic 10 speed chain with my 10 speed XT cassette. Works just as well as the other bike which has an XTR 10 speed chain on an XTR cassette.
