Bought a bike for the bits, to put on my Merlin and the cranks are 180mm. Like most people I ride 175mm. Will I notice the diff?

Most people say no , I currently have a 2nd bike that has 170mm (normally ride 175mm) and without a doubt it does not feel right. The blue Roberts had them once I swapped them to 175mm felt right again (could well all be in the head!!)

Try them. But i think you will notice. It's the same as if some one moved your seatpin up/down 5mm

I personally wouldn't notice that ^^^- but it depends on how tall you are (or, more to the point, how long your legs are) whether you find 180mm cranks too long, after all, it's 10mm difference in total which doesn't sound a huge amount but, from experience, I'd rather go down to 170's than up to 180mm.

But then I'm only 1.76 tall.
