I've used ss couplings on touring bikes before to help with planes and travelling but for the life of me I'm puzzled why you would on a bike in such good condition and not meant for touring?

When I lived in America I used to fly all the time-the size of the country meant that I'd use the plane where we'd use a train or bus in the UK. I also liked to take a bike with me on company trips so an S&S bike is the perfect answer rather than hiring a bike for a day and the money saved on bike boxes and excess luggage charges recoups the S&S charge fairly quickly.
Now I'm back in the UK I can put the bike in the boot of the car easily without the hassle of a rack and I can box it up for storage when staying at friends/relatives houses rather than taking up loads of room.

S&S isn't just for touring bikes, it makes loads of sense on normal bikes too
