Disc brake set comprising:

Front & rear brakes - both NOS M760/M765 including new Shimano pads (only difference between brakes is the reservoir cap)
180mm front post-IS adaptor
160mm rear post-IS adaptor NOS
Mounting and disc bolts
180mm & 160mm discs - used

Note brakes currently European style (front is left) but since you'll end up taking the levers off to trim the hoses, you can swap 'em over then.... £85 for brakes + £6.70 postage (only covered to £50 loss) or £13 postage (covered to £100 loss). New silver XT brakes are £179.99 excluding rotors and front adaptor on Merlin. Just the levers on their own are £44.99 a pair on ebay.

XT chainset, M752 Octalink, 175mm arms, inner and mid rings new this year. £35 + £6.70 postage

XT M751 Front mech 34.9mm, top-pull £7 + £3.70 postage

XT M760 rear mech, rapid rise, good pulleys £18 + £3.70 postage

I'm interested in the brakes. So basically it's everything I would need to put disc brakes on a bike with standard (IS) mounts?

Yep, apart from a pot of Shimano brake fluid, a small section of flexible hose and some olives/barbs to bleed the brakes once the hoses have been shortened. I don't have the little yellow blocks to hold the hose, they didn't come with the brakes (part 7 on second Shimano document).

Would you consider £85 including the £50 insured option? :)
