and wondered if anyone knows any bike shops in/near edinburgh that can do this?

You could try the Bicycle Works on Argyle Place, they're bike mechanics primarily not a bike retail shop. Also Pedals http://pedals-edinburgh.com/Concept(2131558).htm they're another mechanis shop as opposed to bike sales. They're both repair and maintenance specialists so might be able to help or at least point you in the right direction.
