I used to work in the pancake place 25 years ago if that's any help Franchisees gave 10% of the till takings to the "Owner" and had to use their suppliers for food and menus etc. Only fresh veg could be bought locally.

I used to get taken there as a treat when I was wee- Stockwell St. Syrup in wee pouring pots.
I know the usual model but getting contact info is hard, they spend a fortune on promoting uniformity and don't want folk like me asking about individuals. :x
