I have all the clearance needed for thicker touring tyres - never having the need for any before, what is a good tyre for gentle off-road and on road duties?

Keeping rolling weight down to a minium.

Wide range of sizes, fairly light, fast rolling, not too pricey. Not a lot of tread, but they're fine off road in the dry, and anything with enough tread to be viable in mud is too much of a drag for road touring.

The sidewalls might be a little vulnerable if it's flinty in your neck of the woods.
