The cranks aren't fussed about how many sprockets you have at the rear.

You'll need new chainrings though, as 9 speed chains are narrower internally than 8 speed and fewer.

Put simply, no. If you run (say) 11 speed with a 6 speed crank you might have problems with the chain getting stuck in the larger gap. Anything from 7 speed upwards is pretty interchangeable.

Personally I think modern Shimano outboard BB cranks look over-styled and horrible, especially with a classic steel frame. Others may have different tastes.

That's quite a lot: 120mm to 126mm, or 126mm to 130mm is more usual.

If you do it, then I'd consider bracing the brake and chain stay bridges, by tightly binding or clamping them.

My frame was actually misaligned so i went for the slightly less refined method of a plank of wood. It took a while, but expanded the dropouts and realigned the frame well.
