Do aesthetics matter to you when building bikes?

To me they do. That is one of the beautiful things about the bicycle - it can combine both form and function.

damn right - No riser and bar end combos here!

Matching rims/ tyres, matching mechs, stem angles, God, its almost OCD with me...

I try to go for aesthetics, matching rims, tyres, bar/stem & seatpost etc. But usually, in my urgency to get a bike ride-able i slap what ever is laying around on it. Always with the thought of re-doing it properly if i like the way it rides, but never get around to it.

So, i'm going to say sometimes. ;)

Its the ONLY thing that matters! ;)

It has to look right, or it does not go near the bike. Its why I struggle with some of the modern stuff too, is just doen't look 'right'.

It didnt matter before I found Retrobike.

However....

It is now the most important thing

Contrary to some opinion, asthetics does not always involve anodised bling. It's all about balance.
