Know there's instructions on the web somewhere? Anybody know the link or can explain how to do this?
 
Which ones you got?
The older ones, have either a collar or spring clip which holds the bearing in(crank end). Once this is removed, you can remove the axle, normally best by reinstalling the pedal into crank arm and pulling the body. I've never changed the brass bushing at the other end of the axle.
 
Managed to get the pedals apart.
Removed both snap rings.
Having a few issues getting the bearing off the axles.

Looks like the bearing wants to go off the axles right to left as pictured below. Also looks like the way to remove said bearing is to drift it off complete with the plastic collar. Problem is all I've managed to achieve is to mess up the plastic collar. Can't get the bearing to shift. Am I doing the right thing and not trying hard enough?

The bearing does go in that direction. Trying to remember how i got mine off. :? I don't think its that tight from memory. Try lightly clamping the bearing in a vice, then tap the axle down over. ;)
