I have an LX M563 7spd rear wheel.

Can I change the free-hub body to accept an 8spd cassette?

ok, so I need to find a Shimano 8spd free-hub body...anything else need changing?...axle?
 
What's the cheapest one that'll do the job?...Shimano C201?

Another way round which saves a wheel rebuild is to do an '8 from 9'. Use 9 speed shifters and cassette, but discard the largest sprocket and spacer. The remaining 8 fit neatly onto the 7 speed freehub.
