Ok so i know its usually the shifter thats the limiting factor, but has anyone used an old 7 speed LX rear mech on 8 speed? Ive got a really decent one and it seems a shame to waste it...

yes, just adjust the reach screws on the back of the mech to suit.

If you have very thick alu dropouts it might run out of reach for bottom gear, but Shimano built in a lot of extra so you are likely to get away with it.

No no and many times no! Irrelevant. The adjustment screws allow for a very wide spread, far wider than the width of a freehub, 7,8,9, 10 spd cassettes. That is why mechs from around 1986 onwards work up to 9spd without issues

+1 for that; running an LX mech. with an SRAM 9-speed cassette just fine on my latest project 8)
