I'd second Fire XC Pro's, I think they are an excellent all round tyre. I'd also suggest Schwalbe Smart Sam's. They have enough tread to be useful offroad, in reasonable conditions, but still roll well on the road.

Ritchey Z max 1.7 WCS folders would be the best choice, v light at 400g, V fast on and off the road and Orange used Ritchey tyres as OEM BITD.
