About 15 years ago I used to do them most days. An "interesting " experience! If you have all the right tools it's fairly straightforward, if you don't have all the gear I wouldn't bother. Likewise if you have replacement bearing strips and the right size stainless surfaces it's a good way to lose a few hours. You will however struggle to buy internals nowadays, it's not unusual to snap the plastic bearing retainers on the first few attempts so you could easily go from having a functional fork to a pile of bits that you can't reassemble! Personally I would get onto eBay and buy a functioning pair for peanuts.

Only the simpler elastomer/spring variety.

Having the right tools is key but some were only available to dealers.
Replacing the needle/rollers is a job for rocket scientists with Digital verniers only
