+1 for the SRAM cassette. I've got two: nice, quiet shifting and a wide range - as long as the rear mech can take it.

I thought that a nine speed chain on seven speed chain rings was supposed to run the risk of the chain falling between the chain rings. I've never tried it or measured to check, so that could be completely wrong, though.

I've never had any issues with 9 speed chains on a 7 speed set-up. I think the difference in width between a 7 speed chain and a 9 speed is less than half a milimetre and not enough to make any noticeable difference in use.
