Yes you can, but the rollercam won't line up with the rim and so your brake's won't work. The pivot point is halfway-ish down the arm on a rollercam and at the bottom on a canti so you need to place the rollercam higher up on the frame relative to the wheel.

And sometimes, bosses diameter are a bit bigger for some roller cam (I found that problem on a Fat Box crown fork with U brake pivot. The bosses are bigger than standard and I couldn't fit all U brakes. Only Roller cam…)
